    Cherry and Champagne Cocktail Recipe

    This cherry champagne cocktail recipe is an elegant and easy drink to serve at brunch or as a welcome drink and it's pretty perfect for Valentine's Day. This 3 ingredient cocktail is easy to make with homemade cherry simple syrup that can be made ahead of time for easy entertaining. Fresh, light and fruity, you can make this with champagne or prosecco.

    Let's be honest, there's never a bad time for a champagne cocktail, but seen as Valentine's is right around the corner it felt pretty appropriate to share this with you now! This is a great light and fruity drink that's perfect for a pre dinner tipple or a girls' brunch that is so simple to make and a pure delight to drink!

    How To Make This Cherry and Champagne Cocktail Recipe:

    1. First up make the cherry simple syrup by adding the ingredients to a small pan. Bring it to the boil and keep it on the hit until the cherries have softened.
    2. Strain the simple syrup through a sieve
    3. Store the cooled syrup in an airtight container in the fridgeThree process shots to show how to make cherry simple syrup
    4. To make the cocktail, sugar rim your champagne flute and pour in some of the cherry simple syrup
    5. Top with champagne and garnish with a little lemon peel twirl.

    Cherry simple syrup is so....simple!

    Simple syrup is a such an easy way to add flavor and sweetness to your cocktails and it's so easy to make. A plain simple syrup is made with one part water and one part sugar which is then heated so that the sugar dissolves to make a syrup. To flavor the syrup I simply added cherries to the mixture to flavor it. SO SIMPLE!

    Can you make this cherry and champagne cocktail ahead of time?

    You can definitely make the simple syrup ahead of time. It will keep well in the fridge in a sealed bottle for 1 to 2 weeks. You want to pour the drinks right when you are serving them so that the champagne doesn't go flat. Be sure to chill your champagne too before serving it.

    Do you have to use champagne in this cocktail?

    If you don't have a bottle of champagne just laying around (I mean, who even are you?!) then you can easily substitute it with prosecco or sparkling wine. Prosecco is more fruity and flowery in flavor and compared to champagne it is lighter to drink and the bubbles are more spritzy, it's obviously kinder on your wallet too! Adapt this drink to your tastes and budget!

    How do you garnish a champagne cocktail?

    I kept the garnish pretty simple with these cocktails, simplicity and elegance is the way to go when we are talking champagne. I gave the glass a thick quarter sugar rim as the cocktail doesn't really need a tonne more sweetness adding to it, and finished it with a twirl of lemon peel. The lemon peel releases it's aroma when it is twisted and the color works so well against the tone of the drink. 

    Tips To Make This Cherry and Champagne Cocktail Recipe

    1. It's so easy to make your own cherry simple syrup, but if you are short on time you can also buy it.
    2. The recipe for the cherry simple syrup makes about a cup. This is easily halved or doubled depending on your needs.
    3. Let the cherries sit in the simple syrup for up to an hour to really allow them to release their flavors.
    4. Allow the simple syrup to cool to room temperature before sealing it and storing n the fridge.
    5. Be sure to chill your champagne in the fridge before serving, warm champagne is never a good thing.

    Ingredients

    For the cherry simple syrup

    • fresh cherries
    • 1 cup water (235ml)
    • 1 cup sugar (200g)

    To make the cocktail

    • 1 ounce cherry simple syrup (30ml)
    • 5 ounces champagne (or prosecco) (150ml)

    Instructions

    To make the cherry simple syrup

    • Remove the stems and pit the cherries.
    • Put the cherries, water and sugar into a small saucepan and bring to a boil. Boil until the cherries are soft, about 10 to 15 minutes. Take the pan off of the heat and let sit for an hour.
    • Strain the simple syrup through a fine mesh sieve, use a spoon to press down on the cherries to get as much juice out of them as possible.
    • Let cool to room temperature and place in an airtight bottle and store in the fridge.

    To make the cherry and champagne cocktail

    • Dip half of the outside of a champagne glass into water and press into sugar to create a half rim.
    • Pour one ounce of the cherry simple syrup into the champagne glass and top up with chilled champagne.
    • Garnish with a twirl of lemon zest.
