    Mojito Elderflower Cocktail

    Refreshing, zingy and with floral flavours, this Mojito Elderflower Cocktail is easy to make and easier to drink! This classic Cuban rum cocktail with added St Germain, will get the party started!

    Several years ago (longer than I wish to admit too!), we went on an amazing cruise from New York to the UK on HMS Queen Elizabeth II.  When we boarded, we settled in at the first bar we found and perused the drinks menu, and for the rest of that 8 day trip, all I drank was vats and vats of elderflower mojitos!

    Mojito Elderflower Cocktail with St Germain and Havana Club Rum

    St Germain is for sure one of my favourite liquors. Made from Elderflower blossoms it has fruity, floral flavours and works so well with the lime and mint in the classic mojito.  Mojitos are often made with white rum, like Bacardi, but I went for the amber rum, Havana Club - mainly because a friend left some in our fridge so it was rude not to use it up!  Havana Club is aged in wooden casks to give it a golden colour and has a sweeter and richer flavour.

    Mojito Elderflower Cocktail is perfect for entertaining

    For this recipe, I have given you the measurements for one large cocktail but they will easily double, triple or times them by ten to make a mojito elderflower pitcher. If you are making a jug of this cocktail, don't make it too far ahead of time otherwise the ice will melt and dilute the drink.  Get your ingredients together, make it just as your guests arrive and you will have a crowd pleasing drink in 5 minutes!

    Mojito Elderflower Cocktail

    Ingredients

    • 10-12 fresh mint leaves
    • 1 oz simple syrup or 1 or 2 teaspoons of caster sugar
    • ice cubes
    • 2 oz St Germain elderflower liquor
    • 2 oz Havana Club rum
    • juice of half a lime
    • 1 lime cut in quarters
    • club soda

    Instructions

    • Put the fresh mint leaves in to a tall glass and add the simple syrup.  Muddle the leaves and syrup so that the oils in the mint leaves are released.
    • Add ice cubes to the glass, squeeze in the juice of half a lime, the St Germain and rum.
    • Add the lime quarters to the glass and top up with club soda.
    • Give the cocktail a stir and serve
