Make a cut lengthways into each chicken breast to make a pocket and season with a little salt and pepper. Spread the cream cheese into the pockets and top with the stilton. Wrap each breast with the bacon rashers and put to one side.
In a bowl, add the chives and oil to the potatoes and mix well. Put to one side
Roughly chop the vegetables and place into a large bowl. Add the herbs, tomato paste, salt, pepper and oil. Mix well.
Place the chicken breasts on to a large baking sheet and add the potatoes and vegetables. Pour the maple syrup over the chicken breasts and put the tray into the oven.
Bake for around 40minutes until the chicken is cooked through and the potatoes and vegetables are browned. Serve immediately with the sauce from the baking sheet.
