Stuffed Chicken One Sheet Meal

A super easy, fast and tasty one sheet meal, perfect for a weeknight dinner

Ingredients

For the chicken

  • 2 boneless, skinless chicken breasts free range
  • salt and pepper
  • 2 tbsp cream cheese
  • 2.6 ounces stilton or other strong blue cheese (75g)
  • 8 strips bacon
  • 3.3 ounces maple syrup (100ml)

For the potatoes

  • 10.5 ounces baby new potatoes (300g)
  • 1.5 tablespoons olive oil (25ml)
  • 2 tbsp dried chives
  • salt and pepper

For the vegetables

  • 1 zucchini (courgette)
  • 3.5 ounces cherry tomatoes (100g)
  • 1 yellow pepper
  • 3.5 ounces mini portobello mushrooms (100g)
  • 2 tbsp mixed Italian herbs
  • 1 tbsp sun-dried tomato paste
  • 3 tablespoons olive oil (50ml)
  • salt and pepper

Instructions

  • Pre-heat the oven to 180ºc
  • Make a cut lengthways into each chicken breast to make a pocket and season with a little salt and pepper.  Spread the cream cheese into the pockets and top with the stilton.  Wrap each breast with the bacon rashers and put to one side.
  • In a bowl, add the chives and oil to the potatoes and mix well.  Put to one side
  • Roughly chop the vegetables and place into a large bowl. Add the herbs, tomato paste, salt, pepper and oil.  Mix well.
  • Place the chicken breasts on to a large baking sheet and add the potatoes and vegetables.  Pour the maple syrup over the chicken breasts and put the tray into the oven. 
  • Bake for around 40minutes until the chicken is cooked through and the potatoes and vegetables are browned.  Serve immediately with the sauce from the baking sheet.
