Cut the potatoes in half and place in a large bowl. Add the oil, garlic powder and salt and toss to combine. Leave to one side.
Chop the bell peppers into bite sized pieces and add to another bowl. Slice the onion and add to the bell peppers. Drizzle over the oil and Italian seasoning and toss to combine. Leave to one side.
Pat the salmon with kitchen paper to remove excess moisture. Place a little oil in your hands and rub all over the salmon. Sprinkle over the lemon salt and black pepper and rub evenly into the flesh. Leave to one side.
Place the potatoes in the air fryer and cook at 400F / 200c for 5 minutes.
Once done, push the potatoes to one side of the air fryer basket, and add the bell peppers and onions to the other side. Lay the salmon fillet on top of the vegetables and potatoes.
Place the basket back in the air fryer and cook at 360F / 180c for 15 to 20 minutes depending in the thickness of your salmon. Thinner pieces will need less time.
Check the salmon for doneness with fork, it should flake easily.
Cut the salmon fillet in half and serve with the air fried vegetables and potatoes.
Notes
Pat the salmon dry before oiling and seasoning it. This will help it to better absorb the flavors and keep a firmer texture when cooked.
The oil in this recipe helps the salmon, vegetables and fish to cook evenly and absorb the flavors of the seasonings. I don't recommend making this recipe with out the oil, but if you want to reduce the amount, then an oil misting spray works great to get an even coverage.
Thinner fillets of salmon will need slightly less cooking time. If using a thinner piece of fish, let the potatoes cook for an additional 5 minutes before adding it to the air fryer basket.
