Ingredients

  • 1 can lychees (19oz / 560ml)
  • 18 blueberries
  • 1 large lemon
  • 1 large green apple
  • 2 cups apple juice
  • 3 tablespoons granulated sugar
  • 2 bottles white wine (50 ounces / 1.5 litres)
  • 6 ounces limoncello (180ml)
  • 4 ounces vodka (120ml)
  • green food coloring
  • colored sugar for the rim

Instructions

  • Drain the lychees and place a blueberry in each one to make the eyeballs.
  • Chop the apple into chunks and slice the lemon.
  • Add the lemon and apple to the jug and add in the apple juice, sugar, wine, limoncello and vodka. Stir to combine.
  • Stir in the food coloring, add a few drops at a time until you get the right color.
  • Stir in half of the lychees and place the jug in the fridge for 2 to 24 hours.
  • Cover the unused lychees and keep refrigerated.
  • To serve, rim the glasses with the colored sugar and add in ice cubes and a couple of the left over lychee eyeballs. Pour over the sangria and serve.

Notes

  • Don't add ice to the jug before you put it in the fridge. The ice will melt and dilute the drink. I like to pour the sangria over ice, or you can add ice to the jug just before serving.
  • Use fresh and ripe fruit. Use firm apples like Granny Smith or Crispin.
  • Leftover sangria will keep covered in the fridge for 2 to 3 days.
