Air Fryer Plantain Chips

Put down the potato chips and make up a batch of these air fryer plantain chips instead. Super crispy and a little bit spicy, these are a delicious and healthier alternative that require very little effort.

Ingredients

  • 2 plantains (more green than yellow)
  • 1 tablespoon chili flakes
  • tablespoons oil (vegetable or canola)
  • ¼ teaspoon salt

Instructions

  • Peel the plantains and slice into chips, either using a mandolin, the slicer on a box grater, or thinly by hand.
  • Place the sliced plantain in a large bowl and top up with water. Let sit for at least 30 minutes.
  • Drain the plantain through a fine mesh sieve and let sit for 10 minutes to allow the water to drain away.
  • Preheat the air fryer to 400F.
  • Place the plantain slices in a bowl and toss with the chili flakes, oil and salt until well coated.
  • Place the plantain in the air fryer basket and set to 15 minutes at 400F.
  • After 5 minutes, use a spatula to flip the plantain chips over.
  • Put back to continue cooking.
  • Flip the plantain every couple of minutes until crispy. Mine were perfect at 15 minutes.
  • Enjoy immediately.

Notes

  • Different air fryer models can deliver different results. Because you need to flip the chips every couple of minutes, it's easy to cook them to your level of crispiness. Mine were perfect at 15 minutes.
  • Don't skip soaking the plantain slices in water. This is key to crispy chips.
  • Store leftovers in an airtight container. They will start to get soft, but you can get them nice and crispy in the air fryer again. 400F for 2 to 3 minutes will get them back to their crispy glory.
