Air Fryer Stuffed Poblano Peppers

These Mexican stuffed poblano peppers are so quick and easy to cook in the air fryer. Filled with taco seasoned ground beef, corn and tomato and topped with cheese, these roasted poblano peppers are ready to serve in less than 30 minutes.

Ingredients

  • 1 tablespoon oil for cooking
  • 14 ounces lean ground beef (400g)
  • 2 tablespoons taco seasoning
  • 1 can diced tomatoes (398ml)
  • 1 cup frozen corn (160g)
  • 4 poblano peppers
  • ½ cup shredded Mexican cheese

Instructions

  • Heat the oil in a large skillet on a medium high heat. Once hot, add in the ground beef and cook til browned.
  • Add the taco seasoning, diced tomatoes and frozen corn to the skillet. Stir to combine and let gently simmer
  • Preheat the air fryer to 400F. Cut the poblano peppers in half lengthways and remove the seeds.
  • Place the pepper halves in the air fryer (you may beed to do this in batches if your air fryer is small). Cook at 400F for 6 to 8 minutes til blistered and softened.
  • Carefully remove the peppers from the air fryer.
  • Spoon in the beef and tomato filling into each pepper half and top with some of the cheese.
  • Place the stuffed peppers back in the air fryer basket and cook at 375F for 4 to 5 minutes til the cheese has melted.

Notes

  • Choose larger poblano peppers that are rounder rather than longer so that they are easier to stuff.
  • Air frying the peppers before stuffing them makes them softer and easier to eat. If you prefer a crunchier texture, reduce the time or skip it altogether.
  • Take care when removing the peppers from the air fryer to stuff them, they will be very hot. I found that a spatula was the easiest way to lift them out of the basket.
  • To make this recipe even quicker, you can roast the peppers in the air fryer while you are making the beef filling on the stovetop.
