Marinated Flank Steak (Carne Asada) Tacos

Ingredients

For the marinaded flank steak

  • ½ cup orange juice (4 ounces / 120ml)
  • 2 to 3 garlic cloves (roughly chopped)
  • juice of 2 limes
  • 1 tablespoon oregano
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • zest and juice of 1 lemon
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 jalapeno
  • salt
  • 17 ounces flank steak (or skirt) (500g)

To build the tacos

Instructions

To marinade the steak

  • Add all of the marinade ingredients to a large bowl and give it a mix.
  • Stab the steak a few times with a fork and rub in some salt.
  • Add the steak to the marinade and cover. Put in the fridge for at least 4 hours and up to 12.

To cook the steak

  • Take the steak out of the fridge about 30 minutes before you want to cook it to let it warm to room temperature.
  • Heat a little oil in a skillet or frying pan an put on a high heat.
  • Take the steak out of the marinade and brush of any large pieces of garlic. Put into the skillet and cook for around 4 minutes on each side until nicely seared.
  • Once cooked, lay the steak on a large piece of tin foil and loosely tent the steak. Let it rest for at least 15 minutes before slicing into thin strips.

Build the tacos

  • Add some sour cream and guacamole to a corn taco and lay three strips of steak on top. Finish with shredded lettuce and corn salsa.

Notes

The steak can also be grilled for a smokey flavor.
Marinade the steak for at least four hours, if not longer.
Slice the steak against the grain.
