Peanut Butter Crunch Bites

These no bake treats are a healthy low calorie snack that are so easy to make. Peanut butter crunch bites taste just like a favorite candy bar and they are made with no added sugar. Vegan and gluten-free.

  • Place the oats in a blender. Blend 1 to 2 minutes until the oats form a flour. Transfer the oat flour to a medium bowl.
  • Add the peanut butter and maple syrup. Stir the ingredients together. The mixture will be thick but it will come together. Fold the cereal into the peanut butter mixture.
  • Cover a plate with parchment paper. Use a tablespoon to drop portions of the mixture on to the parchment paper, then use your hands to roll the portions into balls. Refrigerate the balls for 30 minutes.
  • Place the chocolate and coconut oil in a microwave safe ramekin and microwave them for 1 to 2 minutes, until they are melted.
  • Remove the plate of bites from the refrigerator and, using a spoon, drizzle the chocolate over the bites.
  • Refrigerate them for another 10 minutes to allow the chocolate to set before serving.

  • If you have an intolerance to gluten, be sure to use GF certified oats.
  • Use dairy-free chocolate chocolate chips to make these bites vegan friendly.
  • Chill the balls on parchment paper do that they are easy to remove.
