These no bake treats are a healthy low calorie snack that are so easy to make. Peanut butter crunch bites taste just like a favorite candy bar and they are made with no added sugar. Vegan and gluten-free.
Place the oats in a blender. Blend 1 to 2 minutes until the oats form a flour. Transfer the oat flour to a medium bowl.
Add the peanut butter and maple syrup. Stir the ingredients together. The mixture will be thick but it will come together. Fold the cereal into the peanut butter mixture.
Cover a plate with parchment paper. Use a tablespoon to drop portions of the mixture on to the parchment paper, then use your hands to roll the portions into balls. Refrigerate the balls for 30 minutes.
Place the chocolate and coconut oil in a microwave safe ramekin and microwave them for 1 to 2 minutes, until they are melted.
Remove the plate of bites from the refrigerator and, using a spoon, drizzle the chocolate over the bites.
Refrigerate them for another 10 minutes to allow the chocolate to set before serving.
