Place the potatoes into a large bowl and add the oil and seasonings. Mix well so that the potato chunks are coated.
Add the potatoes into the air fryer and set to cook at 400f / 200c for 5 minutes.
Meanwhile, peel and slice the onion, cut the bell pepper into chunks and slice the sausages into bitesized pieces. Place in the bowl the potatoes were in, add the oil and seasonings and mix well.
Once the potatoes have cooked for 5 minutes, add the seasoned sausages and veggies to the air fryer basket.
Set to cook at 370F / 190c for 20 minutes.
Stir the ingredients in the basket around every 5 to 7 minutes to help cook evenly.

Notes
For best results, preheat your air fryer before adding the ingredients. If your air fryer doesn't have a preheat function, run it at 380F for 5 minutes before adding them in.
Cut potatoes into bite-sized chunks so they will cook faster and be tender inside and crispy on the outside.
To make sure the potatoes are cooked thoroughly, it's important to air fry first the potatoes alone, then all the ingredients together.
Toss the air fryer basket several times during cooking so that all the ingredients cook evenly.
