This easy-to-follow recipe is a great family favorite, as it combines the rich flavors of Italian sausage, the sweetness of peppers and onions and the heartiness of roasted potatoes. The best part is that everything is cooked in the air fryer, making it a no-fuss cooking option with minimal clean-up required.

    • Sausages: I used Italian Sausage but you can use any type of flavored sausage or use plain pork, chicken, or beef sausages.
    • Bell peppers: I used red bell peppers because they're more flavored and sweeter, but you can use also yellow, green, or a mix of all three.
    • Potatoes: Use waxy potatoes so they keep well their shape and consistency after cooking. You can use baby potatoes, fingerlings, or red potatoes.
    • Onions: I used a Spanish onion for this recipe, but you can use any variety you prefer. White, yellow, red, or even shallots.
    • Seasonings: The seasonings I used are simple and are the best combination to get an amazing flavor that complements all the ingredients. Paprika, garlic powder, salt, and black pepper are all you need and are most likely already in your pantry.

    • In a bowl, season the chopped potatoes (photo 1).
    • Par-cook the potatoes in the air fryer (photo 2).

    • Add the veggies and sausage to the air fryer together with the potatoes (photo 4).
    • Cook, stirring occasionally, to make sure everything cooks evenly (photo 5).

    Recipe Variations

    You can customize this air fryer sausage, peppers onions and potatoes recipe in many different ways using the ingredients you prefer.

    You can use other types of sausages, like Polish sausage, kielbasa, brats, pork, chicken, or beef sausages. You can also use other veggies that you have available, like broccoli, brussel sprouts, sweet potatoes, mushrooms, or carrots.

    If you want a low-carb version, you can skip the potatoes. If instead, you want a vegetarian version, you can use plant-based sausages or skip them altogether.

    You can also use many other different seasonings. You can add thyme, and rosemary for a herbier version. Or you can add smoked paprika or chipotle to make it smokier. You can also make it spicier by adding chili pepper flakes, or cayenne pepper.

    Yes. You can absolutely make this recipe in the oven. Simply chop the ingredient into smaller sizes and add them to a sheet pan and bake for about 40 minutes at 425°F.

    Yes, I recommend using vegetable oil like olive or canola. Oil helps to cook the ingredients evenly without drying out and makes the potatoes crispier. You only need a little.

    Can you cook all the ingredients together at the same time?

    Since potatoes have a longer cooking time than the other ingredients, it's best to give them a head start by cooking them alone for a few minutes extra, then, you can add in the other ingredients and finish cooking altogether.

    Ingredients

    For the potatoes

    • 1 pound red potatoes
    • 1 tablespoon oil
    • ½ teaspoon paprika
    • ½ teaspoon garlic powder
    • ¼ teaspoon salt
    • pinch black pepper

    For the sausages and veggies

    • 1 Spanish onion
    • 1 red bell pepper
    • 6 Italian sausages
    • 1 tablespoon oil
    • ½ teaspoon paprika
    • ½ teaspoon garlic powder
    • ¼ teaspoon salt
    • pinch black pepper

    Instructions

    • Preheat the air fryer to 400F / 200c.
    • Wash the potatoes and chop into bitesized pieces.
    • Place the potatoes into a large bowl and add the oil and seasonings. Mix well so that the potato chunks are coated.
    • Add the potatoes into the air fryer and set to cook at 400f / 200c for 5 minutes.
    • Meanwhile, peel and slice the onion, cut the bell pepper into chunks and slice the sausages into bitesized pieces. Place in the bowl the potatoes were in, add the oil and seasonings and mix well.
    • Once the potatoes have cooked for 5 minutes, add the seasoned sausages and veggies to the air fryer basket.
    • Set to cook at 370F / 190c for 20 minutes.
    • Stir the ingredients in the basket around every 5 to 7 minutes to help cook evenly.
    • Serve!
