Marinated Bocconcini Balls

This easy and quick appetizer will leave guests wanting more! These simple marinated bocconcini balls have flavors of lemon, parsley and basil.

Ingredients

  • 1 cup extra virgin olive oil (divided) (approximately, depending on the shape of your jar)
  • 1 lemon (juice and zest)
  • ¼ cup fresh parsley (finely chopped)
  • ¼ cup fresh basil (finely chopped)
  • ¼ teaspoon red pepper flakes
  • pinch salt and black pepper
  • 7 ounces fresh bocconcini balls (200g / 1 tub)

Instructions

  • Put half of the oil into a large sealable glass jar.
    1 cup extra virgin olive oil (divided)
  • Add in the lemon juice, lemon zest, parsley, basil, red pepper flakes and salt and pepper.
    1 lemon, ¼ cup fresh parsley, ¼ cup fresh basil, ¼ teaspoon red pepper flakes, pinch salt and black pepper
  • Seal the jar and shake to combine.
  • Drain the bocconcini balls and place into the oil mixture.
    7 ounces fresh bocconcini balls
  • Add in the rest of the oil (a little more or a little less if needed) to cover the bocconcini.
  • Seal the jar and store.
