Treat yourself with these simple and tasty cheeseburger quesadillas this week! Quick and easy to make, they're crispy, juicy, cheesy, loaded with flavor and perfect for the whole family.
Add the oil to a large skillet and set on a medium high heat on the stovetop.
Once hot, add in the ground beef and seasonings. Cook, breaking up the beef with the spatula as you go. Cook until the beef is all browned and set to one side.
Prep your burger toppings and make the sauce.
Place a little oil in a grill pan and place on the stovetop on a medium high heat.
Place a tortilla flat in the grill pan. Place four cheese slices on top.
Spoon a third of the cooked beef on to half of the tortilla.
Spoon over some of the sauce, top with four pickles, two slices of tomato, diced onion and shredded lettuce.
Fold the tortilla in half to hold the fillings.
Let the quesadilla cook for a couple of minutes and check for doneness using a spatula. Once browned, carefully flip the quesadilla over and cook the other side til browned and crispy.
Remove from the pan and repeat with the other tortillas.
Serve immediately.
Notes
Be sure to prep all of your ingredients before you start cooking the quesadillas. They cook quickly, so you want everything on standby and ready to go!
Don't cook the quesadillas on too high a heat or the outsides will be done, but the cheese won't be melted to hold them together.
Use a spatula to gently lift the quesadillas to check for doneness.
Take care when flipping them over so you don't lose the fillings. A spatula and a hand works best!
