Ingredients
- Beef: Lean ground beef is best for this recipe so that the quesadillas aren't greasy. Medium ground will work well though if that's what you have!
- Seasonings: Salt, black pepper, garlic powder and onion powder.
- Toppings: Lettuce, tomato, onion, pickles and American cheese slices.
- Burger Sauce: Pickle juice, mayonnaise, tomato ketchup and dijon mustard.
- Tortillas: Use large flour tortillas.

- Brown the ground beef in a skillet (photo 1).
- Prep the toppings (photo 2).
- Place a tortilla in a grill pan on the stovetop. Place on the cheese, beef and sauce (photo 3).
- Add the toppings (photo 4).
- Fold the tortilla in half and cook til crispy (photo 5).
- Flip and cook the other side (photo 6).

Make Ahead, Storage and Reheating
You can cook the beef up to 3 days ahead of time and keep it covered in the fridge until you are ready to use it.
These are best enjoyed as soon as they are cooked, but leftovers can be kept in the fridge for a couple of days. They reheat wonderfully in the air fryer at 360F / 180c for around 5 minutes, or, reheat in the oven at 380F / 190c for around 10 minutes.

Larger flour tortillas are best for this recipe as they are more flexible and easier to fold.
You can use a regular skillet, or cast iron one to cook the cheeseburger quesadillas, but I find I have the best results with a grill pan. I love the grill lines it adds to the tortillas and I find that they get much crispier.

Cheeseburger Quesadillas
Equipment
Ingredients
For the beef
- 1 teaspoon oil (for cooking)
- 1 pound lean ground beef (450g)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
Toppings
- ¼ lettuce (shredded)
- 1 beef tomato (sliced)
- ½ small onion (finely diced)
- 12 pickle slices
- 12 American cheese slices
For the burger sauce
- ½ tablespoon pickle juice
- 2 tablespoons mayonnaise
- 2 tablespoons tomato ketchup
- ½ tablespoon dijon mustard
To make
- 3 large flour tortillas
Instructions
- Add the oil to a large skillet and set on a medium high heat on the stovetop.
- Once hot, add in the ground beef and seasonings. Cook, breaking up the beef with the spatula as you go. Cook until the beef is all browned and set to one side.
- Prep your burger toppings and make the sauce.
- Place a little oil in a grill pan and place on the stovetop on a medium high heat.
- Place a tortilla flat in the grill pan. Place four cheese slices on top.
- Spoon a third of the cooked beef on to half of the tortilla.
- Spoon over some of the sauce, top with four pickles, two slices of tomato, diced onion and shredded lettuce.
- Fold the tortilla in half to hold the fillings.
- Let the quesadilla cook for a couple of minutes and check for doneness using a spatula. Once browned, carefully flip the quesadilla over and cook the other side til browned and crispy.
- Remove from the pan and repeat with the other tortillas.
- Serve immediately.
