Time to get festive at your dinner times with this delicious cranberry brie stuffed chicken recipe. Simple to make, chicken breasts are loaded with creamy brie cheese and tangy cranberry sauce before being wrapped in bacon and cooked in the oven. Easy, simple and so delicious!
Cut the chicken breasts partially in half lengthways and lay flat on a chopping board.
Season all over the breasts with salt and pepper.
Divide the brie and cranberry sauce between the two breasts. Lay in the middle where you have cut.
Close the breasts and wrap tightly with the bacon. Secure the bacon with tooth picks if needed.
Place on a lined baking sheet and cook in the preheated oven for 20 to 25 minutes til the bacon is crispy and the chicken is cooked through.
Notes
Don't cut the chicken all the way through when you cut in in half so that it's easier to fold together.
Don't go overboard on the fillings or they will ooze out when they are cooked.
Wrap the bacon tightly around the breasts. You can secure the bacon ends with toothpicks if it's not holding together, just be sure to remove them before serving!
Once cooked, remove the chicken breasts and place on a chopping board loosely covered with foil. Let them rest for 5 minutes for an extra juicy bite.
