This bacon wrapped chicken breast recipe is the perfect way to ease in to Christmas, stuffed with brie and cranberry sauce, it's a perfectly festive and easy weeknight meal.
If you have some leftover cranberry sauce from Thanksgiving or Christmas, this is one delicious way to make sure that it doesn't go to waste!

Recipe Variations
These cranberry brie stuffed chicken breasts are delicious as they are, but you can easily adapt the recipe to suit your tastes and what's in your fridge.
I seasoned the chicken simply with salt and pepper, but you can add some dried herbs like thyme or rosemary, or a spice like paprika. Try swapping out the brie for another cheese like camembert, goat or blue for a different flavor.
Frequently Asked Questions
Breasts are easiest and best to use for this recipe due to their shape and size, but you can use chicken thighs if that's what you have. Roll the thighs out and pound them to and even thickness, you can then roll the brie and cranberry sauce up in them before wrapping. Thighs take a little longer than breasts to cook through, so allow an extra 5 to 10 minutes for the cooking time.
You can use any cranberry sauce or jelly to stuff the chicken breasts. These are my favorite homemade cranberry sauces:

Depending on what bacon you are using, the bacon can make the chicken appear slightly pink when it is cooked. To avoid this I recommend using a natural bacon with few additives. The best way to check your chicken is fully cooked through is to use an instant read thermometer which should register at 165F.
Make Ahead and Storage
You can wrap your cranberry brie stuffed chicken breasts in the bacon and keep them covered and refrigerated for a few hours til you are ready to cook them.
These are best served straight away so that the chicken is nice and juicy and the bacon is crisp, but leftovers will keep well for 3 to 4 days. Reheat in a pan in a preheated oven at 360F for 15 to 20 minutes to cook through. Add a couple of tablespoons of water to the tin so that the chicken doesn't dry out and wrap tightly in foil to protect the bacon from burning.

- Don't cut the chicken all the way through when you cut in in half so that it's easier to fold together.
- Don't go overboard on the fillings or they will ooze out when they are cooked.
- Wrap the bacon tightly around the breasts. You can secure the bacon ends with toothpicks if it's not holding together, just be sure to remove them before serving!
- Once cooked, remove the chicken breasts and place on a chopping board loosely covered with foil. Let them rest for 5 minutes for an extra juicy bite.

Bacon Wrapped Cranberry Brie Stuffed Chicken Breasts
Ingredients
- 2 chicken breasts boneless and skinless
- salt and pepper to season the chicken
- 4 to 6 ounces brie (110 - 170g)
- 4 tablespoons cranberry sauce
- 6 slices bacon
Instructions
- Preheat the oven to 400F/200C.
- Cut the chicken breasts partially in half lengthways and lay flat on a chopping board.
- Season all over the breasts with salt and pepper.
- Divide the brie and cranberry sauce between the two breasts. Lay in the middle where you have cut.
- Close the breasts and wrap tightly with the bacon. Secure the bacon with tooth picks if needed.
- Place on a lined baking sheet and cook in the preheated oven for 20 to 25 minutes til the bacon is crispy and the chicken is cooked through.
