    Ingredients

    • Carrots: I used ready cut carrot chips from the store. Alternatively you can use a mandolin or a sharp knife to cut whole carrots.
    • Oil: A little oil is needed so that the seasonings stick to the carrots and also helps them to brown and cook evenly. Use a high heat neutral oil like avocado, canola or vegetable.
    • Savory seasonings: Salt, black pepper, garlic powder, onion powder and Italian herbs.
    • Sweet seasonings: Brown sugar, cinnamon and vanilla extract.

    Frequently Asked Questions

How do you cut carrot chips?

I bought ready cut carrot chips from the store for ease and convenience, but you can easily cut your own using a mandolin or sharp knife. Cut the slices thin, but not wafer thin, and as evenly as possible for he best results.

    Can you oven bake them?

If you don't have an air fryer, you can oven bake your carrot chips instead. Oil and season them and place in an even layer on a parchment lined baking sheet. They will take around 25 minutes in a pre heated oven at 400F.

    Are they crispy?

These carrot chips have crispy edges, but are slightly softer in the middle. They don't have the same texture as fried potato chips, but are delicious in their own right! We seriously couldn't stop eating them!

    Serving Suggestions

These air fryer carrot chips can easily be served as a low carb side dish with favorite mains like Cottage Pie or Chicken Cordon Bleu. They are also delicious served as a snack with dips like:

    • Ranch
    • Vegan Hummus Dressing
    • Garlic Mushroom Dip
    • Lime Jalapeno Sour Cream

    Make Ahead, Storage and Reheating

Air fried carrot chips will keep well in an airtight container at room temperature for 3 days, let them cool fully before storing. They can be enjoyed cold, but will loose some of the crunchy texture. To get them crispy again, pop in the air fryer at 400F for 2 to 3 minutes before serving.

    Recipe Notes and Tips

    • If cutting your own carrot chips, it's best to cut them on the diagonal and as evenly as possible. A mandolin works great.
    • Make sure that each piece of carrot is well coated in the oil and seasonings so that they crisp up and cook evenly.
    • Have fun making these with different seasoning mixes!
    • Recipe is easily doubled, though you may want to shake the basket and extra couple of times during cooking.
