    Air Fryer Stuffed Poblano Peppers

    These Mexican stuffed poblano peppers are so quick and easy to cook in the air fryer. Filled with taco seasoned ground beef, corn and tomato and topped with cheese, these roasted poblano peppers are ready to serve in less than 30 minutes.

    I'm a sucker for Mexican food, and as soon as poblano peppers appear in the stores I can not resist picking a few up! Roasting stuffed poblanos in the oven can take a little time, but the air fryer is here to make things quicker and easier!

    Made with just 6 ingredients and ready to serve in less than 30 minutes, these air fryer stuffed poblano peppers are perfect for a quick and easy weeknight family dinner.

    Stuffed with beef and corn and topped with cheese, this recipe is a great to to after a long day!

    • Healthy: At around 300 calories and under 25g of carbs for two stuffed pepper halves, these are a great addition to a low balanced diet. Low in saturated fat, sugar and sodium, and lots of vitamins and nutrients from the veggies.
    • So simple: These roasted poblano peppers are super quick and easy to prep and cook, but they look like lots of effort have gone into them!
    • Kid-friendly: Super mild in spice, this is a dish that the whole family can enjoy. Lots of flavor but not much heat!

    Ingredients

    • Beef: Use lean or extra lean ground beef to cut down on calories and fat.
    • Taco seasoning: I used Old el Paso mild taco seasoning to flavor the filling. You can use another favorite brand or homemade.
    • Diced tomatoes: Canned diced tomatoes create a nice rich base for the filling.
    • Corn: I used frozen corn, but canned or fresh will also work well.
    • Cheese: For topping the peppers. I used a Mexican blend, but and shredded cheese will work well.
    • Poblano peppers: This mild green Mexican peppers are full of flavor. Cut them in half and deseed them before cooking and stuffing.

    • Brown the beef and add the rest of the filling ingredients to the skillet (photo 1).
    • Stir to combine and simmer (photo 2).

    • Fill the halves with the filling and top with cheese (photo 4).
    • Air fry til the cheese has melted (photo 5).

    Recipe Variations

    These air fryer stuffed poblano peppers are pretty darn delicious as they are, but you can easily mix things up to suit your tastes.

    • If you prefer a crunchier bite, you can skip air frying the pepper halves before stuffing them, or cook them for slightly less time.
    • The ground beef can be substituted for other ground meats like chicken, bison or turkey. Or, make them meat free by using a plant based alternative like Beyond Meat.
    • Add in different veggies to the filling like diced bell peppers, carrots or mushrooms.
    • If you want to turn the heat up, add a little cayenne powder or chili flakes into the filling.

    When are poblano peppers in season?

    Poblano peppers are available pretty much all year round in stores, but their peak season is in the summer. Outside this season they do tend to be a little smaller, but they are still just as delicious!

    How spicy are they?

    Poblano peppers are very mild in spice, so they are great for the whole family. They have more heat than a bell pepper, but considerably less spicy than a jalapeno. They are about flavor not spice.

    How do you prep poblano peppers?

    These peppers are super easy to prep. Give them a good wash, then cut them in half lengthways down the middle. Use a sharp knife to cut across the base of the stem inside, where the seeds are, you can then pull all of the seeds out in one go.

    The skins do not need to be removed. After you have softened and blistered them in the air fryer, they can be removed if you prefer.

    Serving Suggestions

    These air fried poblano peppers are a great main meal that can easily be paired with rice, potato, veggie and salad sides. Try them with some of these favorites:

    Make Ahead, Storage and Reheating

    You can easily make the ground beef filling ahead of time, so all that you need to do is stuff the peppers and air fry them. The mixture can be made up to 3 days ahead of time and be kept in the fridge in a sealed container. It is also freezer friendly too.

    The air fried stuffed poblano peppers will keep well in the fridge for 2 to 3 days in an airtight container. They can be reheated in the air fryer at 360F for 5 minutes to warm through to serve.

    Recipe Notes and Tips

    • Choose larger poblano peppers that are rounder rather than longer so that they are easier to stuff.
    • Air frying the peppers before stuffing them makes them softer and easier to eat. If you prefer a crunchier texture, reduce the time or skip it altogether.
    • Take care when removing the peppers from the air fryer to stuff them, they will be very hot. I found that a spatula was the easiest way to lift them out of the basket.
    • To make this recipe even quicker, you can roast the peppers in the air fryer while you are making the beef filling on the stovetop.

    These Mexican stuffed poblano peppers are so quick and easy to cook in the air fryer. Filled with taco seasoned ground beef, corn and tomato and topped with cheese, these roasted poblano peppers are ready to serve in less than 30 minutes.

    Equipment

    • Air Fryer
    • Large Skillet

    Ingredients

    • 1 tablespoon oil for cooking
    • 14 ounces lean ground beef (400g)
    • 2 tablespoons taco seasoning
    • 1 can diced tomatoes (398ml)
    • 1 cup frozen corn (160g)
    • 4 poblano peppers
    • ½ cup shredded Mexican cheese

    Instructions

    • Heat the oil in a large skillet on a medium high heat. Once hot, add in the ground beef and cook til browned.
    • Add the taco seasoning, diced tomatoes and frozen corn to the skillet. Stir to combine and let gently simmer
    • Preheat the air fryer to 400F. Cut the poblano peppers in half lengthways and remove the seeds.
    • Place the pepper halves in the air fryer (you may beed to do this in batches if your air fryer is small). Cook at 400F for 6 to 8 minutes til blistered and softened.
    • Carefully remove the peppers from the air fryer.
    • Spoon in the beef and tomato filling into each pepper half and top with some of the cheese.
    • Place the stuffed peppers back in the air fryer basket and cook at 375F for 4 to 5 minutes til the cheese has melted.
