    Wake Up Sunshine - A Prosecco Brunch Cocktail

    Wake Up Sunshine is a delicious prosecco cocktail that is perfect for a Valentine's brunch - or any brunch come to that! Made with grapefruit liquor, cranberry juice and topped with prosecco (or champagne or sparkling wine). This easy, three ingredient cocktail is the perfect blend of sweet and bitter.

    Do you guys have any plans for Valentine's Day? We tend to keep it low key affair, but if you are celebrating, what better way than with a boozy brunch?!  I made this cocktail especially for Valentine's Day, but let's be honest, this is an awesome cocktail for a tonne of occasions - Mother's Day, Bridal Showers, Girly brunch date....because it's Sunday!

    One of the things I love about Toronto, is that they have fully embraced brunch.  There are so many awesome options in the city from your standard eggs benny through to lamb bacon and Shakshuka.  We are such fans of the whole brunch thing and try to go to a different place most weekends (not right now though - it's freezing and I'm staying in!).  So here's my small offering to the best meal of the day!

    What is a good brunch cocktail?

    Wake Up Sunshine is a super refreshing and light brunch cocktail that's not too sweet and not too bitter.  It's just right. Brunch cocktails, in my opinion, shouldn't be to heavy in the alcohol department, not be too sweet, should be easy to make and easier to drink.  This bad boy ticks all of the boxes for a fabulous brunch cocktail.

    How to make a prosecco cocktail

    I, by no means, am an awesome mixologist.  It's something I'd love to learn more about, but until then my cocktails are simple and therefore super accessible.  Prosecco cocktails are a great option to serve as a welcoming drink at a party or at a brunch because they are light and refreshing, and all you need to do is make the base before your guests arrive (in this case grapefruit liqueur and cranberry juice) and then just top up with cold prosecco on arrival. There's zero hassle involved, leaving you to be hostess with the mostest!

    Prosecco or champagne?

    I decided to go with prosecco for this cocktail, personally I prefer it to champagne, the bubbles are softer and I find it easier to drink - it's pretty kind on the wallet too, you can pick up a decent bottle for around $15. The sweetness of the prosecco balances perfectly with the tartness of the grapefruit liqueur and cranberry juice.  Of course, if you are one of those people with a stash of champagne in your cooler, then by all means you can use that 😉  Sparking wine will also work, just don't get an overly sweet one.

    The grapefruit liqueur I used in this cocktail is from the Canadian based company, McGuinness, if you haven't tried any of their products you should definitely check them out .  They have an awesome range of mixers for all my cocktail fans, and my Baileys Candy Cane Cocktail is made with their Creme de Menthe and Creme de Cacao.

    Ingredients

    • 1 ounce Cranberry juice 29.5ml
    • 1 ounce McGuinness Grapefruit liqueur 29.5ml
    • Prosecco

    Instructions

    • Pour the cranberry juice and grapefruit liqueur into a champagne flute. Top with prosecco

    Notes

    If making a lot of cocktails, you can add the liqueur and cranberry juice to the glasses before hand, then top up with chilled prosecco when you are ready to serve.
