So it's been a pretty good week!...I made my first recipe video...all by myself! I'm super chuffed with it and it's been something I've been wanting to do for ages. Don't get me wrong, I ain't winning no Oscar (maybe a Golden Globe though....), but it feels great to do something new and it's a bit of a personal win. This Stuffed Chicken One Sheet Meal is perfect for weeknight dinners and will help cut down on the washing up at the same time! For prep and cooking, you can whizz this up in less than an hour and costs around £6 per person, based on making this recipe for two. Winner winner, chicken dinner!I went for some strong, classic flavours for the chicken; blue cheese, bacon and maple syrup. I mean, you cant go wrong! One note, buy THE BEST chicken you can, at the very least buy free range, it really does make a difference to the taste and texture of the finished dish. The veg and potatoes are lightly coated in oil and seasoned with herbs, salt and pepper to give them an extra depth of flavour and they will come out of the oven nice and browned.

Stuffed Chicken One Sheet Meal
Ingredients
For the chicken
- 2 boneless, skinless chicken breasts free range
- salt and pepper
- 2 tbsp cream cheese
- 2.6 ounces stilton or other strong blue cheese (75g)
- 8 strips bacon
- 3.3 ounces maple syrup (100ml)
For the potatoes
- 10.5 ounces baby new potatoes (300g)
- 1.5 tablespoons olive oil (25ml)
- 2 tbsp dried chives
- salt and pepper
For the vegetables
- 1 zucchini (courgette)
- 3.5 ounces cherry tomatoes (100g)
- 1 yellow pepper
- 3.5 ounces mini portobello mushrooms (100g)
- 2 tbsp mixed Italian herbs
- 1 tbsp sun-dried tomato paste
- 3 tablespoons olive oil (50ml)
- salt and pepper
Instructions
- Pre-heat the oven to 180ºc
- Make a cut lengthways into each chicken breast to make a pocket and season with a little salt and pepper. Spread the cream cheese into the pockets and top with the stilton. Wrap each breast with the bacon rashers and put to one side.
- In a bowl, add the chives and oil to the potatoes and mix well. Put to one side
- Roughly chop the vegetables and place into a large bowl. Add the herbs, tomato paste, salt, pepper and oil. Mix well.
- Place the chicken breasts on to a large baking sheet and add the potatoes and vegetables. Pour the maple syrup over the chicken breasts and put the tray into the oven.
- Bake for around 40minutes until the chicken is cooked through and the potatoes and vegetables are browned. Serve immediately with the sauce from the baking sheet.
