    Pumpkin Spice French Toast

    Make your mornings a bit more special, and tasty, with this delicious pumpkin spice French toast recipe. Simple and quick to make, this sweet breakfast is full of warming spices, just like a pumpkin pie. This fall recipe is perfect when served with lashings of maple syrup!

    Quick and easy to make and seasoned with nutmeg, ginger, cinnamon and cloves, this indulgent breakfast is a real treat. Quick to prep and cook, it's perfect for a lazy weekend brunch on a chilly morning.

    Ingredients

    • Eggs: An integral ingredient in French toast. They add fat and richness and firm up the middle of the toasts.
    • Milk: You can use a dairy of plant based milk. I like to use 2% but most will work well.
    • Spices: Use ground ginger, nutmeg, cinnamon and cloves for that tasty pumpkin spice flavor.
    • Sugar: I like to sweeten this recipe with brown sugar which adds a really delicious complex sweetness. You can use white sugar, but it will be a harsher sweetness.
    • Bread: I made this with sliced sourdough. Make sure you allow it long enough to soak in the custard mix.

    Frequently Asked Questions

    What's the best bread to use?

    I'll let you into a little secret, I actually wanted to use sliced brioche bread for this recipe, but they didn't have any at the store! Brioche will work great as it's slightly sweet and rich so it will work great with the pumpkin spice flavor. The sourdough works great though too, as will any sliced thickish bread. If possible, use bread that is a day or two old as it will absorb the egg mixture more easily.

    How long do you need to soak the bread?

    This entirely depends on what kind of bread you use. When I use sourdough to make French toast, I need to allow 3 to 5 minutes each side as it's a denser crumb and needs longer to soak everything up.

    Softer breads like brioche only need about 30 seconds each side. If you leave them soaking for too long they can start to break up.

    Can you use a pumpkin spice mix?

    If you have a jar of pumpkin pie spice in your cupboard, then you can replace the individual spices with 1 teaspoon of that instead.

    Make ahead, storage and reheating

    If you have leftover French toast, or want to do a bit of meal prep, French toast is easy to make ahead of time when you know how. Once made, let the toast cool and then freeze it in an airtight container with the slices separated with parchment or wax paper. It will keep well for a couple for months.

    You can cook the toast from frozen or thaw it in the fridge overnight. Frozen will require and extra minute or two to cook through.

    You can reheat the pumpkin spice French toast either in a hot oiled skillet for a minute on each side, or in the oven at 400F for about 4 minutes on each side. It's best to avoid the microwave to reheat.

    Serving Suggestions

    I served this sweet French toast with some powdered sugar, fresh blueberries, raspberries and a drizzle (or two!) of maple syrup. Other fruits like sliced banana or strawberries would work great, or go all out with a dollop of whipped cream.

    Recipe Notes and Tips

    • This recipe used a dense bread like sourdough or challah. If you use a softer bread like brioche, you won't need to soak it for as long.
    • Don't have the skillet on too high a heat or you will burn the bread. It should be at a medium temperature so that the middles cook through.
    • Don't press down and flatten the bread with a spatula while it is cooking.
    • Don't over crowd the skillet when you cook the toast, give it some room and cook a slice or two at a time.

    Ingredients

    • 2 eggs
    • ½ cup milk
    • ¼ teaspoon ground nutmeg
    • ¼ teaspoon ground ginger
    • ¼ teaspoon ground cinnamon
    • ¼ teaspoon ground cloves
    • 2 tablespoons brown sugar
    • 4 slices sourdough bread (or bread of choice)
    • 1 tablespoon oil
    • 1 tablespoon butter
    • Toppings: powdered sugar, fresh berries and maple syrup

    Instructions

    • Add the eggs, milk, spices and brown sugar to a large shallow bowl and whisk together so that everything is well combined.
    • Place the bread slices and let soak on each side in the mix for 3 to 5 minutes if using sourdough, less time if using brioche.
    • While the bread is soaking, heat the oil and butter in a skillet on a medium heat.
    • Once hot and the bread is soaked, let excess custard drip from the bread and place two slices into the skillet (one slice if your skillet is small).
    • Cook on both sides for around 3 to 4 minutes, flip over during cooking to make sure it's browning and not burning.
    • Serve with your favorite toppings.
