    This is no ordinary sandwich! This shredded buffalo chicken sandwich is loaded full of flavor and texture and is a real treat! Easy and quick to make, this sandwich is topped with fresh lettuce, blue cheese, ranch and frickles making every single bite truly delicious!

    I mean, who doesn't love a good sandwich?! This yummy recipe comes together quickly and easily and is a great option if you have leftover rotisserie or roasted chicken. The flavors are super zingy and each bite is packed with texture.

    Ingredients You Will Need

    • Shredded Chicken: This is a great dish to make if you have leftovers from a roast chicken or rotisserie chicken. You can use chicken breast or thigh for this recipe, or a mixture of both! Alternatively you can buy some shredded chicken from the store or oven bake or poach some chicken breast.
    • Buffalo Sauce: The superior choice by far is Frank’s Buffalo Sauce! It's perfectly tangy and spicy and works great with the other ingredinets.
    • Butter: You can use salted or unsalted. A little butter helps the sauce to get silky smooth and helps it stick to the shredded chicken.
    • Burger Buns: I like to use brioche buns that have a touch of sweetness.
    • Lettuce: Lettuce adds a nice freshness to each bite.
    • Blue Cheese: I used Castello danish blue which has a nice tang and creaminess to it. Most blue cheese will work pretty well.
    • Ranch Dressing: It helps cool down the spicy sauce, and quite honestly, is non negotiable.
    • Frickles: If you haven't tried a frickle yet, you need to! These fried pickles add a great tangy taste along with a load of texture.

    How To Make A Shredded Buffalo Chicken Sandwich

    • Place the shredded chicken in a pot with the buffalo sauce and butter (photo 1).
    • Heat on on a medium high heat, stirring occasionally to combine. Cook for 5 to 10 minutes until the chicken is heated through (photo 2).

    • Place a lettuce leaf on each half of a burger bun. On the bottom bun, place a few tablespoons of the shredded chicken, blue cheese, ranch and a couple of frickles. Add the top of the bun.

    Frequently Asked Questions

    Can you make these sandwiches ahead of time?

    The sauce for the buffalo chicken is pretty wet (as a sauce should be!) so it's best not to make them too far ahead of time or the bread will get soggy. You can make the shredded buffalo chicken ahead of time and keep it covered in the fridge for up to 3 days. You can either place it on the sandwich cold, or reheat it. Take care to only reheat it once though.

    What can I use instead of blue cheese?

    I know that for some people the taste of blue cheese can be pretty overpowering. If you don’t like blue cheese, swap it for some fresh mozzarella or even cheddar.

    The buffalo chicken is super delicious, and if you are not in the mood for a sandwich, you can enjoy it in lots of other tasty ways. It's great as an appetizer when served in lettuce wraps and if you want something lighter, it's great when added to a tortilla wrap. Pile it high on a baked potato or stuff it into tacos.

    Recipe Notes and Tips

    • Let the buffalo chicken cool down a little before adding it to the sandwich so it's not too hot to eat.
    • Place a lettuce leaf on the bottom of the bun so that it doesn't get soggy.
    • Make the chicken spicier by adding in a few drops of tabasco.
    • Have plenty of napkins on hand, things are about to get messy!
