    These buffalo chicken lettuce wraps are super quick and simple to make with just a handful of ingredients. Ready to serve in just 15 minutes, they are great to serve as an appetizer or as a light lunch or dinner. Gluten-free, high in protein and keto friendly, they are packed full of delicious flavors, and are a great way to use up leftover chicken.

    The hot weather is well and truly here and the air con has been working overtime! I haven't been too keen to turn our oven on for hours to heat up or apartment, so these lettuce wraps have been an ideal appetizer and quick and easy light dinner.

    Buffalo sauce is one of my favorite flavors and it works super well with the fresh lettuce wrap, and of course it has to be topped with some blue cheese and drizzled in creamy ranch! This super easy recipe is so delicious and a real treat for the old tastebuds!

    Buffalo Chicken Lettuce Wraps Ingredients

    You only need a handful of ingredients for this buffalo chicken appetizer. If you are anything like me, you will have most of this stuff to hand!

    • Shredded Chicken: You can use chicken breast or thigh for this recipe, or a mixture of both! This is a great dish to make if you have leftovers from a roast chicken or rotisserie chicken. Alternatively you can oven bake or poach some chicken breast or buy some shredded chicken from the store.
    • Buffalo Sauce: No question here, the superior choice by far is Frank's Buffalo Sauce! 
    • Butter: A little butter helps the sauce to get silky smooth and helps it stick to the shredded chicken. You can use salted or unsalted.
    • Lettuce Leaves:  I used romain lettuce leaves fro the wraps. Just cut them in half and pop in the filling. They keep nice and firm so they are easy to handle. They have a great crunch to contrast with the softer filling. Bibb lettuce will also work well.
    • Blue Cheese: I used Castello danish blue which has a nice tang and creaminess to it. Most blue cheese will work pretty well. If you don't like blue cheese, some fresh mozzarella would work really well.
    • Ranch Dressing: Buffalo and ranch go together like....peas in a pod! It helps cool down the spicy sauce, and quite honestly, is non negotiable.

    How To Make Buffalo Chicken Wraps

    • Place the chicken, buffalo sauce and butter in a pot (photo 1).
    • Heat and stir until the chicken is warmed through (photo 2).

    • Place a couple of tablespoons of the chicken on to each  lettuce leaf and top with blue cheese crumbles and a drizzle of ranch dressing.

    Can you make this appetizer ahead of time?

    The beauty of this appetizer is that it can be served warm or cold, so you can easily make the buffalo chicken ahead of time and keep it covered in the fridge. It will keep well for 2 to 3 days. Don't be tempted to reheat the chicken if you are making it ahead, it will have been cooked twice at this point so don't risk reheating it for a third time. Cooked chicken should only ever be reheated once.

    What do you serve with lettuce wraps?

    These wraps are perfect to serve by themselves as a starter or a light dinner. To make them a fuller meal, serve them with some oven baked fries. They are great to serve up for parties and game day along with other apps like crispy jalapeno fries and shishito peppers.

    What other toppings can you add?

    I went with the classic toppings of blue cheese and ranch, but you can easily top these with different cheeses or chopped veggies:

    • Diced red onion
    • Sliced cherry tomatoes
    • Diced avocado
    • Guacamole
    • Diced jalapeno peppers
    • Corn Salsa

    Recipe Notes and Tips

    • Let the buffalo chicken cool down a little before adding it to the wraps or the lettuce can wilt.
    • Serve immediately so that the lettuce if fresh and crispy
    • Make the chicken spicier by adding in a few drops of tabasco.

    Ingredients

    • 3 cups cooked shredded chicken (300g)
    • ¾ cup buffalo sauce (175ml)
    • 3 tablespoons salted butter
    • romain or bibb lettuce leaves
    • blue cheese
    • ranch dressing

    Instructions

    • Place the shredded chicken in a pot with the buffalo sauce and butter.
    • Heat on on a medium high heat, stirring occasionally to combine. Cook for 5 to 10 minutes until the chicken is heated through.
    • Place a couple of tablespoons of the chicken on to lettuce leaves, top with blue cheese crumbles and a drizzle of ranch dressing.
    • Serve immediately.

      Delicious and easy recipe for those busy week nights. Great idea for these hot and steamy days. We added a few drops of French's Hot sauce and it was sublime.
