- Cheese: Shredded mozzarella makes this breakfast casserole nice and cheesy!
- Seasonings: Salt, pepper and garlic powder.
- Eggs: This recipe uses six eggs and will serve four.
- Cream: Heavy cream (35%) adds a nice rich and creamy texture to the baked eggs.

- Mix together the eggs, cream and seasonings (photo 1).
- Cook the onions, peppers and sausage in the air fryer (photo 2).
- Top with shredded cheese (photo 3).
- Pour the egg mix over the top (photo 4).
- Cook in the air fryer til golden brown and cooked through (photo 5).
Recipe Variations
This air fryer breakfast casserole is so easy to make just the way you like it!
- Change the veggies: Add in other vegetables like mushrooms, broccoli or zucchini.
- Change the meat: Turkey or chicken sausages work great, or add in some chopped bacon instead. Meat-free sausages work great too.
- Change the cheese: Pretty much any cheese will work great in this!
- Add different seasonings: Try adding in some dried herbs or chili flakes to the egg mix.
- Make it lower fat: Rather than cream, use milk or half and half.
Frequently Asked Questions
I made this chicken fried rice in my smallish 6qt basket air fryer. The dish I used meant that I had to remove the basket and place it directly into the basket base, but it still came out great. This recipe will easily serve four for breakfast.
Any dish that you would put in the oven can be used in the air fryer, to be safe, use one that is oven proof up to 420F. I used my 7.5 inch Staub casserole dish which worked perfectly.
Small metal tins and pans will also work well, but you may need to grease them or line them so that the eggs don't stick.
If you don't have an air fryer, you can easily bake this in the oven instead. Saute the veggies and sausage on the stovetop before adding to a casserole dish and baking in the oven at 380F for around 40 minutes.

Make ahead, Storage and Reheating
Make this cheesy sausage casserole once and enjoy it throughout the week! Once baked, let it cool completely before covering and storing in the fridge. It will keep well for up to 4 days. You can eat it cold, or reheat it in the air fryer at 360F for 3 to 5 minutes to serve.
This is also freezer friendly and will keep well for up to 3 months. Reheat right from frozen at 320F for 10 to 15 minutes.

- Don't be tempted to try and cook this quicker on a high heat. If you do this, the top will get super hard and crispy and the bottom will not be set- learn from my mistakes!
- Depending on what you cook the egg casserole in, you may need to lightly oil the surface of it so that the eggs don't stick.
- As it is, this recipe is super tasty, but feel free to mix up the ingredients to suit your tastes!
- For best results, let the air fried casserole sit for 5 minutes before cutting into it. This will allow any liquid egg to set.

Air Fryer Sausage and Egg Breakfast Casserole
Equipment
Ingredients
- ½ green bell pepper (diced)
- 1 small onion (diced)
- 3 pork breakfast sausages (sliced into bite sized pieces)
- ¼ cup shredded mozzarella (4 tablespoons)
For the egg mix
- 6 eggs
- ¼ cup cream (35%) (4 tablespoons)
- ¼ teaspoon salt
- pinch black pepper
- ½ teaspoon garlic powder
Instructions
- Preheat the air fryer to 400F.
- Place the diced bell pepper and onion into a baking dish and add in the sliced sausage.
- Cook at 400F for 10 minutes, stirring halfway through, til the sausage is browned and the veggies are soft.
- While that is cooking, mix together the ingredients for the egg mix in a jug (eggs, cream, salt, pepper and garlic powder).
- Once the sausage and veggies are cooked, top with the shredded cheese and pour the egg mix over the top.
- Cook at 260F for 30 to 35 minutes til the egg is cooked all the way through.
