This colorful and vibrant spicy mango salsa packs a punch in the flavor department. Super quick and easy to make it's perfect to serve as an appetizer with crackers, or top some grilled fish or chicken with it for a burst of sweetness.

Ingredients
- Mango: Make sure that your mango is ripe. It should give slightly when you firmly squeeze it in your palm, but shouldn't be mushy.
- Red bell pepper: Diced finely to add sweetness and a nice crunchy texture. You can use a different color if you prefer.
- Red onion: Red onions are milder than white or yellow and can be enjoyed raw in recipes. Dice finely for a nice zingy flavor.
- Red chili: I used a red finger chili in this recipe, so it's not overly spicy but has a nice hint of heat.
- Lime juice: Use fresh lime juice rather than bottled, the flavor will be mush brighter and fresher.
- Cilantro: Fresh cilantro adds a nice burst of herby flavors. If you don't like cilantro, you can swap it with parsley instead.

Recipe Variations
This spicy mango salsa is a pretty simple recipe, but you can easily add and substitute ingredients to make it your own.
- Try swapping the mango for pineapple or strawberries.
- Use different colored bell peppers.
- Use green onions instead of red.
- Use fresh parsley to replace cilantro if you don't like the taste.
- Swap the lime juice for lemon juice for a different flavor.
- Make it spicier by using a Thai red chili rather than a finger chili, or add in a pinch of cayenne.
- Leave out the chili if you are sensitive to heat.
- If you don't have a fresh chili, you can use chili flakes.
- Add a minced garlic clove for an extra depth of flavor.

This spicy mango salsa will keep well, covered in the fridge for two to three days. If you can, make it at least 30 minutes ahead of time and let it rest in the fridge so that the flavors have time to develop.
Fresh mango is bet to use in this recipe as it's much juicier. In a pinch you can use frozen, just let it thaw fully before mixing it with the rest of the ingredients. It's best to thaw it in a fine mesh sieve so that excess moisture can escape.

Ingredients
- 1 ripe mango (diced)
- 1 red bell pepper (finely diced)
- 1 red onion (finely diced)
- 1 red finger chilli (finely diced)
- ¼ cup fresh cilantro (4 tablespoons)
- Juice of 1 lime
- ½ teaspoon salt
- ½ teaspoon black pepper
