    This healthy air fryer meal for two is easy to prep and cook, and ready to serve in 30 minutes. Lemon pepper salmon fillet is cooked with seasoned vegetables and baby potatoes in the air fryer basket for a quick and nutritious weeknight dinner. Simple to make, delicious to eat, and hardly any clean up!

    This air fryer salmon, veggies and potatoes recipe has quickly become a go to weeknight meal for us, and it's easy to see why! Quick to prep, well-balanced and healthy and full of Mediterranean flavors, this one is a no-brainer!

    The salmon fillet is seasoned with lemon and black pepper and is cooked perfectly til flaky and buttery, and the veggies are seasoned with Italian herbs. The potatoes are garlicky and tender with crispy edges.

    This no-fuss delicious dinner is a breeze to make, I'm sure it will be incorporated into your weekly menu pretty quickly!

    Ingredients

    • Potatoes: Baby potatoes are great for this air fryer recipe. No need to peel them, just cut them in half and season the before cooking. They have a creamy texture and get perfectly tender.
    • Vegetables: I used bell peppers and onions for the veggies in the meal.
    • Salmon: For best results, use a thick fresh fillet of salmon. I prefer to use skin on salmon that protects the fish whilst being cooked, and the skin is easy to remove if you want to before serving.
    • Oil: Use a high heat neutral oil like canola, vegetable or avocado.
    • Seasonings: Garlic powder, salt, Italian seasoning, lemon salt and black pepper.

    Recipe Variations

    This air fryer salmon with vegetables and potatoes is delicious as it is, but it's super easy to adapt it to suit your own tastes and diet.

    • Use a different fish. Cod, tuna, or other thick fillets of fish can be used in place of salmon if you prefer.
    • Make it low carb. Simply skip the potatoes and double up on low carb veggies.
    • Use different seasonings. I went for Mediterranean style flavors for this dinner, but you can easily mix it up using a combination of other spices and herbs like paprika, cumin, thyme and anything else you can lay your hands on! If you don't have lemon salt for the salmon, try using a lemon pepper seasoning instead.
    • Use different veggies. This is a great recipe to use up any veggies you have laying around! Broccoli, mushrooms, asparagus and cauliflower all work great in this recipe.

    Frequently Asked Questions

    What size air fryer is this meal cooked in?

    I used my 6qt basket air fryer for this recipe and it's the perfect capacity for a healthy meal for two. If you have a larger air fryer, of course you can use that. If you want to make this a meal for 3 or 4, I would suggest a slightly larger air fryer or a double air fryer, so that the ingredients don't get too crowded.

    Can you use frozen fish?

    Yes! Frozen fish fillets work great in this recipe. Make sure that they are fully defrosted before using them so that they cook through thoroughly.

    When do you know the salmon is cooked?

    Depending on the thickness of your salmon, it will take between 15 and 20 minutes to cook through. The salmon I used was quite thick, so needed the full 20 minutes.

    You can use an instant read thermometer to check for doneness, it should register at 125f / 63c or higher. If you don't have a thermometer, the flesh should easily flake with a fork, and be an even opaque pink color throughout.

    If you use a thinner salmon fillet, you may want to let the potatoes and veggies cook for an additional 5 minutes before adding the salmon, so that they are not undercooked.

    Make Ahead, Storage and Reheating

    You can prep and season the salmon, vegetables and potatoes an hour or two before cooking. Keep them covered and refrigerated til ready to air fry.

    This is a great weeknight dinner recipe that is great served right out of the air fryer as soon as it's ready, but it's also great for meal prep. Once cooked, let cool fully, then store covered in the fridge. The meal will keep well for up to 3 days.

    Reheat the meal in the air fryer at 360F for 3 to 5 minutes til everything is heated through.

    Recipe Notes and Tips

    • Pat the salmon dry before oiling and seasoning it. This will help it to better absorb the flavors and keep a firmer texture when cooked.
    • The oil in this recipe helps the salmon, vegetables and fish to cook evenly and absorb the flavors of the seasonings. I don't recommend making this recipe with out the oil, but if you want to reduce the amount, then an oil misting spray works great to get an even coverage.
    • Thinner fillets of salmon will need slightly less cooking time. If using a thinner piece of fish, let the potatoes cook for an additional 5 minutes before adding it to the air fryer basket.

    Equipment

    • Air Fryer (I used a 6qt basket air fryer)

    Ingredients

    For the potatoes

    • 10 ounces baby potatoes (280g)
    • 1 tablespoon oil (canola, vegetable, avocado etc)
    • ¼ teaspoon garlic powder
    • ¼ teaspoon salt

    For the vegetables

    • 2 bell peppers (your favorite colors, I used red and orange)
    • 1 onion
    • ½ tablespoon oil
    • ½ tablespoon Italian seasoning

    For the salmon

    • 1 pound fresh salmon fillet (450g)
    • a little oil
    • 1 teaspoon lemon salt
    • ¼ teaspoon black pepper

    Instructions

    • Preheat the air fryer to 400F / 200c.
    • Cut the potatoes in half and place in a large bowl. Add the oil, garlic powder and salt and toss to combine. Leave to one side.
    • Chop the bell peppers into bite sized pieces and add to another bowl. Slice the onion and add to the bell peppers. Drizzle over the oil and Italian seasoning and toss to combine. Leave to one side.
    • Pat the salmon with kitchen paper to remove excess moisture. Place a little oil in your hands and rub all over the salmon. Sprinkle over the lemon salt and black pepper and rub evenly into the flesh. Leave to one side.
    • Place the potatoes in the air fryer and cook at 400F / 200c for 5 minutes.
    • Once done, push the potatoes to one side of the air fryer basket, and add the bell peppers and onions to the other side. Lay the salmon fillet on top of the vegetables and potatoes.
    • Place the basket back in the air fryer and cook at 360F / 180c for 15 to 20 minutes depending in the thickness of your salmon. Thinner pieces will need less time.
    • Check the salmon for doneness with fork, it should flake easily.
    • Cut the salmon fillet in half and serve with the air fried vegetables and potatoes.
