Summer is well and truly here, and this creamy chocolate coffee milkshake is the perfect way to cool down.
Unashamedly indulgent, this mocha milkshake is one delicious treat that's worthy of any diner menu.
Super simple to make with just 4 main ingredients this caffeine milkshake is sure to perk you up. It's thick and creamy, but not overly sweet, with the bitterness of the coffee and cocoa balancing out the sweet vanilla ice cream.

Ingredients
- Instant Coffee: I made this with instant rather than brewed coffee so that the flavor doesn't get lost. You can use brewed coffee, but it will need to be REALLY strong.
- Milk: I used 2% milk, but you can use whole milk or half and half to make it super creamy. You can also use a plant based milk like almond or soy.
- Cocoa powder: Use unsweetened cocoa powder as you already get a lot of sweetness from the ice cream.
- Ice cream: Use a really good quality vanilla ice cream for this recipe. I prefer to use a soft scoop one as it blends more easily. You could also use chocolate ice cream if you want a more pronounced chocolate flavor.

- Place all of the ingredients into a blender (photo 1).
- Blend til smooth (photo 2).
- Pour and enjoy (photo 3).
Frequently Asked Questions
Yes! You can of course drink these as soon as you've made them, or you can make them up ahead of time. In the fridge, they will only keep well for an hour or two before the textures change, but you can freeze them in their glasses, covered with plastic wrap or foil for up to a month. Just take them out of the freezer for 10 minutes and they are good to enjoy!
If you do freeze them, don't add the toppings until you are ready to drink.
I found that this ratio of liquid to ice cream worked really well. It was sip-able but still thick and creamy. If you want a thicker milkshake just blend in some extra ice cream, and if you prefer it thinner, add in a little more milk.
Don't fret if you don't have a blender - I found this ingenious hack using a microwave from Baking Mischief. You gently melt the ice cream in the microwave, then shake everything together. Check out the post for step by step instructions.
Toppings Suggestions
You can of course enjoy these chocolate coffee milkshakes as they are, but where's the fun in that?! I topped mine with whipped cream, a dusting of cocoa powder and a few chocolate sprinkles.

Chocolate Coffee Milkshake
Ingredients
- 1 teaspoon instant coffee
- ¼ cup boiling water (60ml)
- ½ cup milk (120ml)
- 1 teaspoon unsweetened cocoa powder
- 3 cups vanilla ice cream (450g)
To serve (optional)
- whipped cream
- cocoa powder
- chocolate sprinkles
Instructions
- Mix together the instant coffee with the boiling water. Place in the fridge to let it cool.
- Once cool, add the coffee and the rest of the ingredients to a blender.
- Blend til smooth.
- Pour into glasses and top with whipped cream, a dusting of cocoa powder and chocolate sprinkles.
