Ingredients
- Coconut milk: Make this mocha with cartoned coconut milk rather than canned. Canned will be fairly thick in consistency. Cartoned coconut milk also contains less fat and calories so it's a healthier option for a mid afternoon drink.
- Coffee: You can use instant coffee, or your favorite brewed espresso for this recipe.
- Cocoa powder: Use unsweetened cocoa powder for that rich chocolatey flavor that works so well with the coffee.
- Vanilla extract: This is optional, but a little vanilla adds a nice flavor and also adds a little sweetness.
- Sugar: Brown sugar works great in this recipe, as the molasses adds a rich and complex flavor. You could use white sugar in a pinch, or maple syrup works as a great natural sweetener.

Coconut Mocha (Vegan Chocolate Coffee Drink)
Ingredients
- 3 cups coconut milk
- 2 tablespoons instant coffee or two shots of espresso
- 1 tablespoon unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1 tablespoon brown sugar
To serve (optional)
- whipped coconut cream
- grated dark chocolate
Instructions
- Place all of the ingredients into a small pot.
- Heat on a medium high heat on the stovetop, whisking to combine the ingredients.
- Once hot and steaming (but not boiling) pour into two cups.
- Top with coconut whipped cream and grated dark chocolate.
