Ingredients Notes
- Oil: Oil helps the salmon and vegetables to take on the flavor of the marinade. Use a neutral flavored oil like vegetable, canol or avocado.
- Lemon: This recipe uses both the zest and juice of a lemon for a fresh and zingy flavor.
- Garlic: Use fresh garlic for the best taste. In a pinch, a couple of teaspoons of garlic powder will work well.
- Vegetables: I used a mix of zucchini, bell peppers and an onion.
- Salmon: For the best taste, use fresh salmon fillets. They should be fairly thick so that they don't fall off of the skewers.

Recipe Notes and Tips
- Make sure you use skewers that fit into your air fryer basket. 8 inch skewers are perfect for mine.
- Soak the skewers in cold water while the salmon marinates. This will prevent them from burning.
- Cut the salmon and veggies into large bitesized chunks. Don't make the too small or they will fall off of the skewers during cooking.
