    Air Fryer Salmon Skewers

    Marinated in garlic and lemon juice, these air fryer salmon and vegetables skewers are wonderfully fresh and flavorful. Simple to prep and cooked quickly in the air fryer, these salmon kebobs are perfect for an easy weeknight dinner.

    These air fryer salmon skewers are perfect for when you need a quick and effortless dinner for the family! Marinated salmon and vegetables are quickly cooked in the air fryer for a simple but delicious meal.

    Salmon fillet is cooked with zucchini, bell peppers and onions on skewers and everything is marinated in lemon, garlic and herbs.

    Ingredients Notes

    • Oil: Oil helps the salmon and vegetables to take on the flavor of the marinade. Use a neutral flavored oil like vegetable, canol or avocado.
    • Lemon: This recipe uses both the zest and juice of a lemon for a fresh and zingy flavor.
    • Garlic: Use fresh garlic for the best taste. In a pinch, a couple of teaspoons of garlic powder will work well.
    • Vegetables: I used a mix of zucchini, bell peppers and an onion.
    • Salmon: For the best taste, use fresh salmon fillets. They should be fairly thick so that they don't fall off of the skewers.

    Recipe Variations

    You can add other veggies that you have to hand to these kabobs; mushrooms and cherry tomatoes work great. You can add in other seasonings to the marinade too if you wish.

    Serving Suggestions

    These air fryer salmon skewers are great with a rice side dish for a filling and satisfying meal. Try them with one of these easy recipes:

    Make Ahead, Storage and Reheating

    The salmon and the veggies can be marinaded for up to 2 hours ahead of time, or just 30 minutes if you are short on time.

    Once cooked, they will keep well in the fridge for around 3 days and can be quickly reheated in the air fryer for 3 or 4 minutes at 375f / 190c.

    Frequently Asked Questions

    Can you marinate salmon overnight?

    It's best to marinade the salmon for no longer than a couple of hours. This marinade contains lemon juice and it's acidity can start to breakdown the salmon and it can become mushy.

    Can you make these with chicken?

    Sure! This recipe works great with chicken. You can marinade it for up to 4 hours and will require longer in the air fryer, about 15 minutes, to cook through.

    Can you make the skewers with other fish?

    Other firm fish like swordfish and tuna will work great with this recipe. It is best to avoid flaky fish like cod.

    Recipe Notes and Tips

    • Make sure you use skewers that fit into your air fryer basket. 8 inch skewers are perfect for mine.
    • Soak the skewers in cold water while the salmon marinates. This will prevent them from burning.
    • Cut the salmon and veggies into large bitesized chunks. Don't make the too small or they will fall off of the skewers during cooking.

    Equipment

    • Air Fryer
    • 6 Small wooden skewers (8 inch skewers fit perfectly in my air fryer)

    Ingredients

    • ¼ cup oil (4 tablespoons) (vegetable / canola / avocado)
    • zest and juice of one lemon
    • 4 garlic cloves (minced)
    • 1 tablespoon dried Italian herbs
    • 1 teaspoon salt
    • 1 medium zucchini sliced into rounds
    • 2 bell peppers cut into large bitesized pieces
    • 1 Spanish onion cut into large bitesized pieces
    • 2 pounds fresh salmon (skinless and boneless) (900g) cut into large bitesized pieces

    Instructions

    • Add all of the marinade ingredients into a large bowl or dish and mix together.
      ¼ cup oil, zest and juice of one lemon, 4 garlic cloves, 1 tablespoon dried Italian herbs, 1 teaspoon salt
    • Add the chopped vegetables and salmon to the marinade and stir to coat. Cover and refrigerate. Marinate for 30 minutes to 2 hours.
      1 medium zucchini, 2 bell peppers, 1 Spanish onion, 2 pounds fresh salmon (skinless and boneless)
    • Soak the wooden skewers in a bowl of water.
    • When ready, thread the salmon and vegetables onto the skewers.
    • Cook in the air fryer at 375F / 190c for 8 to 10 minutes until the salmon is pink and cooked through.
