Can you use thighs instead of breast?
In all of these recipes, chicken breast is easily swapped for thighs if that's what you have to hand. Just be aware that chicken thigh will take slightly longer to cook through, but otherwise you are good to go!
Fresh or frozen?
Raw chicken shouldn't be kept in the fridge for more than 2 days, so freezing it is a really convenient option, you just have to remember to defrost it before using!
How to freeze chicken
Remove the chicken pieces from it's original packaging and place into sealable freezer bags. Remove as much air as you can. Frozen chicken will keep well for up to 9 months.
How to thaw chicken
The best way to thaw chicken is in the fridge. You need to plan ahead a little, but you will get the best results thawing it slowly this way. If you've forgotten to take your chicken breast out of the freezer, keep the chicken in it's bag and place it into a large bowl of water, weighed down with a bowl or plate. Change the water every 30 minutes and it will be perfectly defrosted in around an hour and a half.
Reheating cooked chicken
Cooked chicken will keep well in the fridge for up to 4 days. It can be sliced and enjoyed cold on salads, or you can reheat it. Be aware that cooked chicken should only be reheated once.
Reheat chicken breast in a preheated oven at 350F / 180c. Place a couple of tablespoons of water in the baking dish with the chicken and cover it with foil. It will take around 20 minutes to heat through, depending on the thickness of the cut.
Equipment
One of my best kitchen investments has been an oven-proof skillet, it's easily the most used piece of kit I have in my cupboards! Mine is fairly deep so it allows me to cook all kinds of meals. A cast iron skillet will do the job nicely too.
To get perfectly cooked chicken, an instant read thermometer is a must.
Tips and Notes
- For the best quality chicken, buy organic and air chilled if you can.
- For the tenderest chicken, let it come up to room temperature before cooking it.
- Cooked chicken breast will be an even white color throughout when you slice it.
- For best results use an instant read thermometer so that you don't over or undercook the chicken. It should register at 165F.
- Let your chicken rest for 5 minutes before slicing it. This allows the juice to redistribute so it's super tasty and succulent.
